CUCUMBER SALAD--Fuchs                                                                       CUCUMBER SALAD--Karen Emerson

Slice 3-4 Cukes in bowl, stir in 1 t. salt &                                                     2 C. sugar;  1 C. cider vinegar;  1 t. celery seed;  1 T. salt; 

3 T. vinegar.  Let sit for a few hours in frig.                                                  1/2 C. water;  4 large cukes--peeled & sliced;  1 large onion--sliced

Later, stir in diced onion, chopped dill & a                                                  Mix first 5 ingredients till sugar is melted. 

little cream.                                                                                               Pour over veggies.  Put in frig overnite.

Great as a simple salad & wonderful with potatoes.                                     Yummy!!

 

Using our squash, corn, tomatoes & onion

SQUASH CASSEROLE--Mayse

Simmer 2 C. sliced squash with onion for 10 minutes.

Mix together 1 can cream of chicken soup and 1 C. cubed

American cheese--Velveeta.

In a casserole layer:

*squash

*4 ears cooked corn cut off cob.

*3 sliced tomatoes

*cracker crumbs

*soup & cheese mixture

Alternate layers ending with crackers and parmesan cheese.

Bake 20-25 minutets at 375 in oven.

 

Using our squash, zucchini, eggplant, onions & green pepper

SUMMER VEGETABLE CASSEROLE--Jingle Hagey

Saute 2 medium onions, sliced & 1 green pepper, diced in 3 T Olive

Oil till slightly brown.  Add:

1 eggplant sliced

2 yellow squash sliced

2-3 zucchini sliced

1/2 C. sliced stuffed olives

1 T. Water

salt, pepper

Cook vegetables till soft.  If very runny drain off some liquid.  Turn into

greased casserole.  Mix in 1 small can Tomato Paste.  Top with Parmesan

Cheese.  Bake at 325 for 1 1/2 hours.  Good cold also.
